When you think of dining out in Las Vegas, certain things probably come to mind: buffets, celebrity chef restaurants, fine dining, etc. Pizza, however, isn’t necessarily one of them. But that doesn’t mean that Las Vegas isn’t home to some of the nation’s best pizzerias. Serving almost as many types of pies as there are toppings, pizza fans can count on Las Vegas for always having the perfect slice, no matter what type of pizza they are craving. Home to arguably the best pizza in Las Vegas, this popular pizzeria is famous for its award-winning Brooklyn pies. In order to ensure the dough tastes as authentic as possible, a custom water system pumping “New York water” is installed in every restaurant. Pizzas are then cooked in a 25-ton coal-fired brick oven that heats up to 1,200 degrees to give them Grimaldi’s famous crisp and smoky crust. Three types of pies are available—traditional, white with garlic or pesto—and guests can customize their order any way they want from an extensive list of toppings (we recommend the traditional pizza topped with ham and ricotta). This downtown pizzeria serves every type of pizza imaginable, from Californian and Chicago cracker thin to classic Italian and Sicilian style. The secret is out on this hidden gem. Located down a long hallway lined with album covers, this nameless Strip pizzeria serves some of the city’s best New York-style pizza. Guests can choose a slice from a selection of pies already made or build their own creation, with toppings that include savory meatballs made in house. Whatever you decide on, be sure to try the white pizza topped with seasoned ricotta, mozzarella, Parmesan and garlic oil—it’s truly one of the best white pizzas in town.

One of the city’s best-kept secrets, Project Pie takes the build-your-own pizza concept to a whole new level. Similar to the assembly line format found at Chipotle Mexican Grill or Subway, guests get to watch their pies being made from the dough up, choosing not only what toppings they’d like (with selections that include artichokes and Canadian bacon), but also what types of sauce and cheese for one low price. A menu of specialty pies is available as well, with such mouthwatering selections as a white pizza topped with prosciutto, caramelized onions, mozzarella and Parmesan. Guests can get their pizza fix one of two ways at this Strip pizzeria: by the pie or by the slice. Known for its tasty New York-style pizza with a thin, chewy crust, visitors can either dine inside the casual restaurant and feast upon a 12- or 18-inch pizza of their choosing or grab a slice to go at the convenient walk-up counter.
